Appearance: Medium ruby color with good clarity.

Aromatics: Juicy red fruits, raspberry, dusty cherry, quince and rhubarb, hibiscus, orange pekoe tea, baking spice. Complex and fruity in every enticing whiff.

Palate: A bit more dense and chewy than the elegance in the nose would suggest, with tasty and savory ripe red/black berry fruits. The mouth is a bit topsy-turvy, as the inital attack is more earthy and complex and the finish is quite fruity/juicy. As the persistent berry fruits fade away, the palate is left with a wonderful spice/earth/loam echo.

Food Pairing: Medium rare venison steak smothered in butter and port-poached morel mushrooms, Moroccan-spiced lamb chops, roast chicken with pan gravy, the best meatloaf you can find.

Aging: This wine spent an extended amount of time (18 months+) in French oak barrels, and as such is ready to enjoy now through 3-5 years for most palates, and 5-7 years should produce nearly full maturity for most American palates. For those British or prone to risky ventures, let it go to 10! I dare you! This wine will improve with decanting/aerating through 2018..
