2014 J. Wilkes Paso Robles Highlands Zinfandel

Appearance: Medium ruby with excellent clarity/brilliance.

Aromatics: Plum, grapey/vinous with sweet/brambly spice, dusty earth and a complex array of red berry fruit and savory/leathery hints and suggestion of new leather.

Palate: Layered, elegant, bright, primary, and lively with ripe plum, black grape and juicy cherry flavors, with a good length and an earthy/spicy/savory/brambly finish.

Food Pairing: Pairs well with anything off the grill: Tri-tip, burgers, BBQ, or short ribs, fresh pastas with tomato and meat-based sauces. For cheeses, try an aged Vermont cheddar or a tangy goat cheese. Squash-blossoms stuffed with goat cheese, deep fried with a marinara would also be a perfect vegetarian match. 

Aging: With only moderate alcochol, tight structure borne from cold nights in the Highlands, and fruit that will build and refine as this wine ages, I recommend cellaring for 2-5 years for hose that enjoy their zins primary but balanced, 5-7 years for those that wish the wine was a bit earthier, or (for those without the patience to wait) to decant the wine and consume immediately.
